A hearty and comforting soup made with dried yellow split peas, often associated with French-Canadian cuisine. Traditionally made with ham, but can be easily adapted for a vegetarian version.

  1. In a large pot, heat olive oil over medium heat.
  2. Sauté onions, carrots, and celery until softened.
  3. Add garlic, split peas, ham bone (if using), bay leaves, and thyme.
  4. Pour in water or broth and bring to a boil.
  5. Reduce heat and let it simmer for 1.5 to 2 hours, stirring occasionally.
  6. Remove ham bone, shred the meat, and return to the pot.
  7. Season with salt and pepper, and serve hot.
